These are the instructions that I’ve used.
- Make sanitizer solution: Mix 5 gallons of water with 1 Tbs. of Iodophor Sanitizer.
- Take yeast out of refrigerator.
- Put one pot on the stove with 1 gallon of water.
- Bring the water to 160 degrees.
- Take the pot off the heat and add the grains.
- Set the timer for 20-30 minutes.
- Put the second pot on the stove with 1 gallon of water.
- When the timer goes off, add the grain water to the second pot.
- Sparge the grains by pouring 1 quart of warm water over them.
- Bring the pot to a boil.
- Once the pot is boiling, add the malt extract.
- Either remove the pot from the heat during this process, or bring the temperature down low to avoid burning the extract.
- Bring the pot back to a boil.
- Once it is boiling, set the timer for 60 minutes.
- Before the boil is completed, add cold water to the carboy or ice to the plastic fermenter.
- After the 60 minute boil is complete, strain the hops out of the pot.
- Then add the wort to the primary fermenter.
- Take the temperature of the wort.
- Once it is between 70 and 80 degrees, take a hydrometer reading.
- Once the reading is taken, add the yeast.
- Stir the wort to mix in the yeast.
- After the initial fermentation activity has subsided (2-3 days), rack the wort from the primary fermenter to the secondary.
