These are the instructions that I’ve used.

  1. Make sanitizer solution: Mix 5 gallons of water with 1 Tbs. of Iodophor Sanitizer.
  2. Take yeast out of refrigerator.
  3. Put one pot on the stove with 1 gallon of water.
  4. Bring the water to 160 degrees.
  5. Take the pot off the heat and add the grains.
  6. Set the timer for 20-30 minutes.
  7. Put the second pot on the stove with 1 gallon of water.
  8. When the timer goes off, add the grain water to the second pot.
  9. Sparge the grains by pouring 1 quart of warm water over them.
  10. Bring the pot to a boil.
  11. Once the pot is boiling, add the malt extract.
  12. Either remove the pot from the heat during this process, or bring the temperature down low to avoid burning the extract.
  13. Bring the pot back to a boil.
  14. Once it is boiling, set the timer for 60 minutes.
  15. Before the boil is completed, add cold water to the carboy or ice to the plastic fermenter.
  16. After the 60 minute boil is complete, strain the hops out of the pot.
  17. Then add the wort to the primary fermenter.
  18. Take the temperature of the wort.
  19. Once it is between 70 and 80 degrees, take a hydrometer reading.
  20. Once the reading is taken, add the yeast.
  21. Stir the wort to mix in the yeast.
  22. After the initial fermentation activity has subsided (2-3 days), rack the wort from the primary fermenter to the secondary.
